Organoleptic characteristics: Characteristic color from pink to purple-red and cut appearance with fat infiltrated into the muscle mass. SMELL AND FLAVOR: meat with a delicate flavor, slightly salty or sweet. Pleasant and characteristic aroma of the area influenced by its special climate of very cold in winter and very hot in summer. TEXTURE: not very fibrous. FAT: bright, white-pinkish-yellowish color, aromatic and with a pleasant taste, the consistency varies according to the percentage of acorn feeding.

Date of Expiry: It has no expiration date, but it is recommended to consume not exceeding 6 months from the moment of sale.
Conditions of conservation: Dry and cool place (between 10º and 20º) and preferably hanging. Once cut, it must be consumed immediately or wrapped in wax paper or transparent film to avoid contact with air. In any case, it is advisable to cut only what is going to be consumed. It has an approximate consumption period of 3 months once the cut occurs, but it is advisable to consume it within 30 days.
What is the blue seal
The blue seal is the hallmark of HIS house, the Autor García Mimbrero ham or shoulder, a product that has been made with passion and dedication for more than 65 years.
Its founder, Rafael García Mimbrero, had a clear vision: to create a product with organoleptic characteristics that are maintained over time.
How do they get it? Carefully controlling the entire production process, from genetic selection to the curing of the hams, through the production of high-quality feed.
With this blue seal, they are separated from the Iberian standards and its standard qualities known as white, green, red and black bridle.
Author's ham or shoulder has more demanding quality standards than any public or private organization: its client.
In their fields in Extremadura, they carefully select the specimens that will be chosen to be Author García Mimbrero, based on their genealogical books that guide them to the most suitable fathers and mothers.
These pigs enjoy an extensive life, feeding on special feed made by García Mimbrero, and taking advantage of natural resources such as scraps, mushrooms and grass.
In their cellars, the hams rest for a minimum of 2 years, and some even reach 3.
The profiling or V-cut is carried out without excess unnecessary fat, so that you pay for the product, not for unusable fat.
Before leaving their cellars, the master ham makers, with decades of experience behind them, carry out the drafting to ensure that each piece meets their demanding quality standards.
