Tasting note:
This wine has an intense amber color that becomes golden. On the nose it is a white with a lot of depth and a lot of personality; tropical notes of peach or apricot are appreciated. Also citrus and special that make it an even more unique wine.
In the mouth, intense flavors and special prominence has the stone fruit. With a long finish, it is a sweet and fresh wine thanks to its acidity. Despite having hints of honey, it is not cloying as it contrasts with the acidity and freshness.
Operating temperature:
Viticulture: ecological and vegan.
Geology and soil: vineyards are found in deep soils with little organic matter. They are very calcareous, sandy and stony soils.
Crafting: the first thing that is done is to freeze the water, in order to obtain a higher concentration of sugars in the must -which must be pressed before the ice crystals break-. Fermentation lasts two or three months and is done in small stainless steel tanks.
Pairing: goes well with cheeses, especially strong cheeses; It can also be combined with cold cuts and even with some chocolates.
