Sanlúcar de Barrameda, Spanish gastronomic epicenter of the first order

09/06/2022

We continue with the discoveries that we are making around our Spanish geography. The province of Cádiz shines with its own light in our selection of gourmet products. Tradition and above all, safeguarding its uniqueness over the years.

Sanlúcar de Barrameda, Spanish gastronomic epicenter of the first order

Cadiz It is a province that reminds me a bit of my Catalonia, but still in a smaller version. Because it has it all, sea and mountains, a delta of a great river, different climates and an enviable wealth of biodiversity. Even so, we were unaware of its small gastronomic oases into which we could divide it. Today I want to stop at a town that has its name in capital letters on Made in Spain Gourmet: Sanlucar de Barrameda.

Nestled on the left bank of the mouth of the Guadalquivir River, opposite the Doñana National Park, the origin of the first settlement in Sanlúcar is sponsored by the construction of a Phoenician temple dedicated to Astarte.

It is a city with a stately air, which has an urban structure that is characterized by being divided into two large nuclei: the Barrio Alto and the Barrio Bajo. The Barrio Alto is the historical and monumental nucleus, with narrow streets, white facades and aristocratic palaces such as the Palace of Orleáns and Borbón or the Renaissance Ducal Palace of Medina Sidonia. If Cádiz is called “la Tacita de Plata” Sanlúcar is not far behind, because it makes you fall in love with its stately and historical contrasts, with the wild and almost virgin nature, which coexist in perfect harmony.

For tapas in Sanlúcar, nothing better than Plaza Cabildo or Bajo de Guía, the fishermen's neighborhood awash with restaurants where you can try the famous king prawns, fish and seafood stews.

If we talk about eating, it is not surprising that Sanlúcar de Barrameda has been granted the gastronomic capital of Spain 2022. Sanlúcar offers, among other things, the wines that went around the world for the first time, top-level seafood and gourmet-quality vegetables, grown next to the beach with salt water, quite an achievement. With an enviable raw material, the popular cuisine of Sanlúcar is full of traditional treasures such as the popular omelette shrimp, or cooked prawns and chamomile.

Fran Senra, the architect of our knowledge

And it is here where we stop to thank a person who has allowed us to discover the gastronomy of this Cadiz coastal town. And that is none other than Fran Sera. This is one of those stories that we like to know in Made in Spain Gourmet. Story of sacrifice and conviction in what one wants. Thus, in the summer of 2018, Francisco Senra began his idea of creating some preserves of the typical stews of Sanlúcar de Barrameda, Cádiz. The recipes came from his mother, who has helped create a school among other cooks to develop the business on an industrial level. But everything follows the same ritual as if they came out of Fran's mother's kitchen. However, they are products that have a good gourmet food, and with the aim of projecting this traditional Cadiz food nationally and internationally.

The brand Sanlucar, is what you want to share through gastronomy and traditional recipes. The only great secret is the same that triumphs in the rest of the companies that work with us, to use the highest quality products: cuttlefish, prawns, spinach, chamomile branches, extra virgin oil... and that results in excellent and ready products. to eat after removing them from their glass jars and heating them.

Offering today a finished product without colorants or preservatives, is a test that is committed to a demanding public who wants the best and the healthy.

And it is that every history of entrepreneurship has an origin, and that of Fran Senra comes from having seen the world and worked in cities like Chicago or New York, and knowing how to value, from a distance, what her land, Sanlúcar, and its gastronomy were . From then on it was all about going back and deciding to create his own company. Joining other partners such as inseparable Adolfo, has made the brand already a reference in Sanlúcar gastronomy.

Its acceptance has been excellent from the first day and little by little its popularity is spreading throughout Spain. And for this reason, the international leap is one of the pending subjects that Made in Spain Gourmet, will help to achieve it: conquer the world through the traditional gastronomy of Cádiz. Products of always, for the world.

Our Sanluqueñas recommendations

Of course we will share our recommendations.

bread with fried choco. Great seafood product from Sanlúcar de Barrameda, with all the flavor of this beautiful corner of the province of Cádiz. It is a sterilized and Extra Quality product. These crashes show up chopped and cooked with a mashed garlic, bread, spices, and a dash of Manzanilla from Sanlúcar de Barrameda. They will surely make you enjoy. All you have to do is heat it up a bit and eat it! Pair it with a Chamomile Papirusa de Lustau Of course.

Prawns with tomato from Rosario The very seafood and very sanluqueña recipe. To enjoy it in all its splendor, you will only have to heat it up a bit. "The key is in the sofrito" says José Antonio Capitán, the master canner at Conservas Senra de Sanlúcar. «What we do is take pear-type tomatoes from the Sanlúcar orchard and fry them with onion, red and green peppers and a little salt, all finely chopped. We let it cook for more than an hour and a half and at the end, when we set it aside, we put the peeled prawns. It's on the fire for 30 seconds and that's it. Then it is pasteurized to turn the stew into a preserve…nothing else is added to it». Your wine: Lustau White Vermouth.

Spinach with chickpeas from my Gitana. Spinach with chickpeas is a traditional dish of Andalusian cuisine in which vegetables, legumes and bread are combined to give as a result a dish that, in addition to surprising for its excellent flavor, is rich in nutrients and protein. Your wine: Lustau Red Vemut.
