INGREDIENTS for 2 people
- A can of cockles 14/18 Real Conservera Española
- 300g celery
- 150g cherry tomatoes
- 100g ginger
- s / c Sal de Ibiza
- s / c EVOO premium SIETEMIL
- s / c Pedro Ximenez Vinegar from Naturvie
DEVELOPMENT
- We prepare the vinaigrette: we laminate the ginger and cut it again into small pieces. In a container we put the extra virgin olive oil, together with the Pedro Ximénez vinegar and stir it. Add a little bit of Ibiza Salt and accompany it with the finely chopped ginger.
- On the other hand, we cut the cherry tomatoes in half and the celery, we cut it by its branches and both, we placed them on an elongated plate or slate.
- Once they are well placed on the plate, we proceed to place the cockles on top of the celery and tomatoes, as the protagonists of the salad they are.
- We take a little of the cockle broth, and mix it with the previously made vinaigrette. So that it takes that taste of the sea from the cockles and we remove it.
- Finally, add the vinaigrette over the cockles, celery and cherry tomatoes.
- All perfectly well plated, with an excellent presentation.
And ready to eat!!
