Terroir

Les Flandes is a space formed by a large amphitheater of vines, raised on a large vertical wall of limestone, more than 12 meters high. Due to the infiltration of rainwater, spectacular landslides have occurred on the rocky wall that allow access and examination, in an absolutely exceptional way, the subsoil of the vines located on its surface.

The soil is moderately deep, with a basic pH and highly evolved. It has a medium to fine texture and a good mineral balance, with the accumulation of carbonates in the middle layers. The level of organic matter is low. Up to 65cm deep it presents numerous cavities and galleries due to the high activity of the native fauna.
The slope of the land in the form of terraces prevents the accumulation of rainwater, forcing the vine to a vertical development of the roots, seeking moisture and taking advantage of the cracks found in the limestone rock. This fact allows the vines to maintain stable production and quality, even in years of extreme drought.

Microclimate

The vines extend north facing, shaded, and receive a nuanced insolation. The altitude compared to the surrounding land and the easy entry of cooler air from the North give rise, during the hottest seasons, to a high nighttime thermal contrast, a factor that favors a slow ripening of the grapes. These very special conditions give us optimal aromatic expression, complete phenolic development and the achievement of good sugar levels, while maintaining the high acidity essential for the long aging in the bottle that the wines will have.
The Lebeche wind, a south-westerly wind coming from the Baix Penedès coast, reaches us during summer afternoons as a marinated breeze loaded with humidity. This humid air brings two benefits for the vineyard: on the one hand, it provides water on the driest and hottest days due to the phenomenon of night condensation and as a moderator of the surrounding temperatures due to morning evaporation.

As in the rest of the Estate, all the vineyards are surrounded by wild areas and Mediterranean forest. The great existing biodiversity provides the vines with natural protection against plant diseases, allowing us to cultivate naturally, with healthy and resistant plants. Cultivation is carried out following the strictest organic and ecological criteria, in the same way as in the other 95 hectares of vineyards on the Heredad de Can Llopart de Subirats.
The vines of Les Flandes were planted in the decades from 1940 to 1960. They have an approximate production of 4000 kg/ha. (Less than 1,5kg per strain)

Ticu Vineyard (planted in 1960), Montònega variety. It is the phenotypic adaptation of the Parellada variety to mountain terrain. It is the most delicate grape, requiring careful green pruning and vegetative management. In Les Flandes, due to its peculiar conditions, it is possible to obtain wines with great aging potential and exceptional finesse from its grapes.

Viticulture: This wine comes from the “Clot del Roure” xarel·lo vineyard on his Can Prats property in San Llorenç, located in the privileged area of ​​Espiells, in the Anoia river basin. Winemaking

In small tanks, and strict control during fermentation, we vinify each variety separately according to the vineyard from which it comes to personalize each of the wines they will obtain.

BREEDING

Inside the cellars, protected from light, with constant humidity and low temperatures, their bottles rest. Only with these optimal conditions and long aging is it possible, year after year, to transform the grape into an exceptional cava. The long aging contributes the complexity of the bouquet, the finesse and the integration of the carbonic content of its reserve and gran reserve cavas.

The long aging contributes the complexity of the bouquet, the finesse and the integration of the carbonic content of its reserve and gran reserve cavas.

During the first months of the year, when the temperatures are lower, they bottle their wines and cavas. Under these conditions, a slow fermentation takes place in the bottle to obtain the best aromas and some fine bubbles that will be combined to start the long aging process. Preparation: The very warm autumn that lengthened the period of energy reserves of the vine. The rains allowed to increase the hydric capacity of the soil. The winter was dry and very warm, causing an advanced budding of the strain. The spring was warm and very dry, which caused a loss of production. Specific rains during the month of July and the beginning of August helped the grapes to ripen well. They had a not very productive and good quality harvest with a high acidity for their wines. Its vineyards are, to a large extent, old vines located in Costers de l'Anoia and located between the municipalities of Sant Sadurní d'Anoia, Gelida and Sant Llorenç. Vineyards with a marked character, a quality that is needed to obtain their terroir wines.

The grape grows between gently undulating slopes, crossed by deep streams and a typically Mediterranean climate: moderately hot and dry summers, mild winters and irregular rainfall. To the autochthonous varieties, which are the ones that occupy a large part of its vineyards, such as Macabeo, Xarel·lo, Parellada and Tempranillo, others such as Cabernet Sauvignon, Chardonnay, Pinot Noir, Merlot or Syrah are added, which allow them to find balance in the coupages.

The roots, moderately deep, are hooked into a loam-clay-silt soil, well structured, porous and active at the level of fauna. Thanks to the ecological and biodynamic agriculture that is applied, ants, worms and all kinds of organisms live and develop, promoting the necessary natural balance.
