Xavier Lahuerta by Xavi Lahuerta Recipe: Bean Caldo Despensa D´Lujo with Aloe Vera, leek, celery, Extra Virgin Olive Oil and baby spinach

We continue with healthy recipes and traditional products, as always. Because if we eat following the Mediterranean diet, our health will thank us. The choice of legumes, pure vegetable protein, and the brand we have selected for our MadeinSpain.store, the Despensa D'Lujo, from Galicia, gives us extra exceptional quality, and that Xavi, as always, makes the most of it.

 

INGREDIENTS FOR 2 PEOPLE:

  • 80 gr in dry Bean Caldo Despensa D´Lujo
  • 700 ml mineral water 100 gr white leek
  • 100 gr white celery
  • s / c Granite de sal de Ibiza
  • An Aloe Vera leaf
  • 20 gr baby spinach leaves
  • EVOO Premium Picual Sietemil

 

PREPARATION (1 person):

  • Clean the beans beforehand with mineral water and soak for 24 hours in cold water (without salt).
  • Drain and place in a pot with mineral water, in a proportion of 3 times the amount of beans, and then put them to cook for 90 minutes over medium heat.
  • We cut the leek and slice it. In a pot that we put to heat, we put a drizzle of extra virgin olive oil and the leek, and we leave it marked on both sides. Later, we add the celery and we also let it brown in the fire. We add half of the mineral water to create the broth. And after 3 minutes, we add the beans broth and the other half of the mineral water
  • We leave it to cook for another 10 minutes and take the opportunity to add the Ibiza salt and a little more Extra Virgin Olive Oil. Then we introduce six pieces (more or less half) of the Aloe Vera, and about 10 grams of baby spinach, and we let it finish cooking everything together.
  • And finally, we go to plate. We will put the broth beans on the plate taking advantage of the broth, which gives it an enhanced flavor, and on top we will put, to decorate the dish, other fresh pieces of Aloe Vera and baby spinach, which will give a freshness to the dish.
  • To finish we add a little more Extra Virgin Oil and we will have our healthy vegetable dish to enjoy it.
  • Suitable for vegans and for those who want to enjoy a healthy diet.
