Tasting note:
Intense and bright amber color with copper reflections. Aromas of hazelnut praline and candied orange peel, notes of varnish and woodwork on a smoked wood background. Dry, sharp and tasty, with a refreshing acidity. Delicious and spicy salinity with an extraordinarily long finish.
Operating temperature: 13-14º C
Viticulture: 100% Palomino from the Montegilillo vineyard, in the Carrascal area, with albariza lands, very suitable for growing palomino grapes.
Preparation: Double aged. First a biological aging stage, under the yeast flower veil, and later, when the veil is lost, an oxidative aging stage begins. Due to concentration, after almost 20 years of aging, the alcoholic degree increases to exceed 20% vol. Aged for 18 years in the Castillo de San Marcos winery, in the coastal city of El Puerto de Santa María.
Pairing: Serve as a companion to consommé, foie gras, cold or smoked meats, with tables of cheeses, blue fish or seafood. It is a wine that pairs very well with very spicy dishes.
