On a few very specific days, at the beginning of the harvest season, during the month of October, it is made from green fruits to achieve its unique attributes. At least 20 kg of olives are necessary to obtain 1 liter of product, since the green olives have not yet formed their oil. So you can already imagine how exclusive this oil is.
Seeing its Manzanilla Cacereña extra virgin olive oil flow across the surface of a plate anticipates the pleasure of its pure, deep and lively flavor. Raw or incorporated into cooking, it is an essential component of the traditional cuisine of our land. Its properties also make it very suitable in the most current gastronomy.

Tasting note:
Its aroma is exclusive, unique, different. Of great complexity and multiple sensations. It breaks out with an intense green fruitiness, apple and leaf, with a sharpness reminiscent of the freshness of summer fruits. Notes of banana, alloza, flowers and vanilla, pepper and cinnamon also appear. And in the background, the evocation of a holm oak forest, the environment of its origin.
The palate is pure and clean, sweet at first and immediately enveloping with its warm bitterness, its liveliness, its measured spiciness.
And the finish, full of calm and persistent energy, with a memory of green leaves and olives, the essence of nature. MO comforts as an invocation to basic and eternal elements. Bread, fresh water, rosemary and cistus, figs and grapes. The stone, the trunk, the flower.
Pairing: It is the ideal companion to highlight raw salads, vegetables, sauces and vinaigrettes. (perfect for emulsified sauces). It is also ideal to pair with Iberian pork (a few drops) and with cured and aged Manchego.
