A new recipe from Paqui (Instagram @ladelsevillano5248), as always, delicious and irresistible: Lemon cake. In addition, it has given it a healthy touch with Sucralín, because it has fewer calories, and everyone can enjoy it, but it is also very good!
It is one of Paqui's favorite recipes, a very spongy cake, so much so that it looks like a cloud of how tender it comes out. And with a great lemon flavor that, when you sink your teeth into it, you want to hit another, another... until you finish it.
And with Sucralin, you have that sweet touch that you want, naturally.
Ingredients
- 280 g. Of flour
- 1 tablespoon yeast
- 1 / 2 teaspoon salt
- 180 ml. lemon juice
- Zest of 2 lemons
- 40 g. of sucraline (equivalent to 300 g of sugar)
- 8 eggs
- 120 ml. mild olive oil
- 1 teaspoon cream of tartar
Crafting
- Preheat the oven to 160 °.
- We will sift the flour, yeast and salt, reserve.
- Separate the yolks from the whites and mount the whites until stiff with half the sucraline and cream of tartar.
- In another bowl we will beat the yolks with the rest of the Sucralin for about 5 minutes, until we have a clear mixture.
- We will add the oil, the zest and the lemon juice, beating just until it is integrated.
- Add the flour, baking powder and salt, mix just until there are no lumps.
- Add half of the whipped egg whites to the dough, with enveloping movements and pour the other half of egg whites, doing the same thing, mixing just until the dough is homogeneous.
- Pour into the special Angel Food mold and bake for about 50 minutes or until the puncture comes out clean.
- Remove from the oven and let the cake cool upside down, resting on the legs that the mold has, until it is completely cold.
We prepare a glaze with:
- 250 g. icing sugar
- 4 tablespoons of lemon juice!
Stir until we have the desired consistency and add it on top, let it solidify and decorate with slices of lemon and mint.
