We are in season for artichokes, a very attractive vegetable due to its cleansing properties and diuretic effect. Thinking of the summer, they help eliminate toxins, promote the digestion of fats and promote weight loss, oh, and reduce cholesterol. What more can we ask for? Our Gastronomy Ambassador, Xavier Lahuerta, accompanies them with lmabrda cabbage and some dates. And with our MadeinSpain products, Mas Montseny Extra Virgin Oil, Pedro Ximenez Vinegar from Naturvie, and Sal de Flores de Ibiza salt.
Ingredients for 2 people:
- 4 pcs. artichokes
- 1 bunch fresh thyme
- 1 pc. Lemon
- 1 pc Red cabbage
- s / c star anise
- 4 pcs dates
- Extra Virgin Olive Oil Mas Montseny (Arbequina variety)
- s / c Sal de Flores de Ibiza
- s / c Pedro Ximenez Vinegar (Nartuvie)
DEVELOPMENT
- First, clean the artichokes with cold water, cut the part of the stem, cut the upper part of the artichoke, place in an orderly way in the pot, and add natural mineral water, in addition to salt, fresh thyme, juice of lemon.
- Bring the artichokes to a boil over moderate heat until they are fully cooked.
- Remove from the water, remove the unnecessary leaves from the artichokes, and leave them ready to bake.
- Cut the Red Cabbage very fine, and season with extra virgin olive oil, it is also infused with Star Anise and the remaining water of the artichokes when they have been cooked.
- Everything is placed in the same tray with the artichokes.
- Place some pitted dates in the oven with the rest of the products, and proceed to bake for 15 minutes at 180 ºC.
Once the artichokes are extracted, they are plated.
We prepare the vinaigrette with extra virgin oil, Pedro Ximénez vinegar, the cooking juice infused with aniseed and the Sal de Flores.
Subsequently, the vinaigrette is placed on top of the artichokes, red cabbage and dates.
And to enjoy a very healthy dish!
