The Salchichón de Vic from Casa Riera Odeix is 160 years old. A product that continues to be made in the same traditional way and with the same quality in the processes. A protein that Xavier Lahuerta knows how to work very well, and in this case, in a very Mediterranean salad.
INGREDIENTS for 2 people
- 100gr Salchichon Casa Riera Ordeix
- 1 Rustic loaf of bread
- s / c Salad mix
- s / c Extra Virgin Olive Oil Mas Montseny
- s / c Sweet Vinegar Seasoning La Tapia
- s / c Black garlic Abuela Carmen
- Fresh coriander
- Nutmeg
- Pink pepper
- Clove
- Salt of green pepper and lemon from Sal de Ibiza
DEVELOPMENT
- First, we cut the rustic sourdough loaf into small pieces, and sauté it with Mas Montseny EVOO oil together with Abuela Carmen's black garlic, finishing it off the heat with grated nutmeg.
- Second, we prepare the vinaigrette: in a container we mix all the ingredients the cloves, pink pepper, finely chopped coriander, sweet vinegar seasoning, extra virgin olive oil and green pepper salt with lemon.
- Once the bread is finished, it is plated. We prepare a mixture of a selection of mini mixed lettuce leaves, dress with the vinaigrette and place it on top of the bread.
- Subsequently, the Vic Casa Riera Ordeix sausage is placed, cut into thin slices on top of the mezclum, and the black garlic is added, we also chop it and place the two on top of the mezclum.
- To finish, add a generous splash of EVOO and a personal touch of green pepper and lemon salt.
