The history of jam

The origins of this tasty compound that is jam, based on fruit and sugar, are not entirely clear. It is known that its origins are very old, but there is a mixture between history and legend. In Made in Spain Gourmet we clarify it a little more.

Two legends around jam

environment to the jam or jam, numerous stories and legends have been created. One of the best known legends is that of oranges, which dates back to the time of Catherine of Aragon wife of the king Henry VIII from England. The king missed being able to eat the fruits of his land, and in order to enjoy them, he had no better recipe than to preserve them as orange marmalade. He so he could enjoy, in a natural way, the magnificent and delicious Spanish oranges.

The protagonist of the other legend around jam is Maria de' Medici, who suffered from vitamin deficiency, so he sent some men from the court to Italy to collect the best citrus fruits in the country.

To better preserve all the flavor of the fruit, it was made in the form of jam. On the boxes was written "By Maria Ammalata" (For Sick Mary), and it is thought that the name "Marmellata" (jam) was due to a misinterpretation of this phrase. This is undoubtedly the one that excites us the most, and since we like to be dreamers, we will think that was the start of the jam.

What is the origin of the jam?

According to the recipe book of Roman cuisine, the fruit was soaked in wine and honey. The Greeks also made different types of honey and quince preserves. And in the Middle Ages, it was already possible to find a method similar to the current one to elaborate the jams o jams.

La making jams was born from the need to preserve the fruit for a longer time, beyond its harvest period, and thus be able to consume and savor it out of season. In the past, life was much more relaxed gastronomically speaking, and there were no refrigeration systems or freezers, so the only method to preserve food was to make different types of preserves, such as jam.

Where does the word jam come from?

It comes from the Portuguese "marmelada", which means "marmelo jam", which translated into Spanish would be quince. The term "melmelon" is present in many ancient Greek writings, and means "honey apple", because the first "jams" were made from boiled quince and honey.

Jam and jam are the same?

The jam should not have more than 40%-59% sugar on the total dry weight. While the jam can have more than 60% sugar. We are passionate about the flavor of pure fruit that jams like those of Antoinette Fruits, pure fruit that can be enjoyed alone or paired with cheeses, in pastry recipes and with a good foie gras.
