It depends on where in Spain, the aperitif time is accompanied with a vermouth or vermouth. An increasingly popular drink, a great classic in Catalonia and it has more and more followers throughout the country.

Vermouth is not a fad

I do not think it is a fashion, if not a lifestyle and a time to enjoy with friends or the most loved ones. The weekend is usually the ideal time to enjoy what they call ¨vermute¨. Many think, that it is to serve you and drink a vermouth, but this goes further. One of the few pleasures that even during these days of pandemic and confinement we have left, is to pamper our palate. Enjoying this drink, acquires a new dimension, and becomes a Premium gastronomic experience.

1.Forget me not by CLos Figueras (DOQ Priorat)

A different vermouth, made in the area of Gratallops, Priorat, For the Clos Figueras winery. Normally, the base wine is usually a white wine, but in this case here they decide to use two typical grape varieties of the area. The Red Grenache and Carignan. Once the wine from this blend has been obtained, the aromatic herbs are left to infuse for about 60 days. The aging takes place in 500L barrels for another 18 months. An artisan vermouth, in the style of Reus, very gastronomic. Intense nose, with notes of cinnamon and nutmeg, and on the palate a pleasant finish with notes of aromatic herbs from the Mediterranean.

To fully enjoy and discover the potential of this vermouth, Xavi Lahuerta recommends having some Sal de Ibiza chips, some toasts with Green olive pate of Naturvie and some fillets of Salted Anchovy from San Filippo.

 

2.Lustau White Vermouth by Lustau Selected Fine Wines (O. Jerez-Xerés-Sherry)

A white vermouth, based on Fino and Moscatel wine, two flagship wines from the Jerez area, Cádiz. Serve chilled, a refreshing aperitif, with hints of citrus, a pleasant initial sweetness that will whet your appetite, and a finish reminiscent of fine sherry wine.

When preparing a tapas at home, take out what you have in the fridge. Our chef recommends harmonizing it with a vegan cheese, from Veggie Karma,  karma, the fermented with semi-cured pepper. The Naturvie seasoned olives they can go in the glass, with ice and a slice of lemon peel. For the brave, He Truffled Salchichón de Riera Ordeix House it is an exquisite accompaniment.

3. Fot-li by Alegre Wines and Spirit

4.VRMT Andalusi by Robles Winery (DO Montilla Moriles)

One of the great novelties is the vermouth of Oak Cellars. Together with the chef with two Michelin stars, Paco Morales, the third generation of the winery, have decided to produce the vErmut VRMT Robles, with the queen grape of the Córdoba area, the Pedro Ximénez. With an Andalusian recipe, based on an organic Oloroso wine. A wine that has aged in oak barrels for eight years. It has a balance between sweet, acid and bitter, with hints of southern spices, especially cloves and cinnamon.

Perfect to enjoy it with smoked meats, sausages and also with nuts. If you like potato chips, one trick is to add a few drops of La Tapia anchovy vinegar, a unique and totally natural product that will revolutionize the market.
