Their pigs spend the first stage of their life on their farm, feeding on natural cereals made in their facilities until they reach a weight of between 40 and 50kg, when they access the pastures.
In them they enjoy an exquisite diet composed of this selection of cereals as well as grasses, tubers, roots and acorns, reaching 90/100kg at the beginning of October (when the montanera begins), at which time the acorns and They feed exclusively until they reach an approximate weight of 180kg in their adult stage. This is essential to maintain the Iberian breed and be able to call it acorn-fed Iberian.
When cut, it has a marble appearance with veins of infiltrated fat, with soft golden tones and a red color that invites you to taste it.
Tasting Notes
At the end of its curing process, it passes through a bell where oak charcoal burns very slowly, giving it a persistent, enveloping and unmistakable bouquet.
Its flavor is the union of the presence of paprika, with a soft touch of garlic, together with spicy nuances and smoke, providing it with a long and pleasant aftertaste.
