Healthy Grandma Cupcakes!!

We bring you a delicious and irresistible recipe: Grandma's cupcakes. Created by Paqui (@ladelsevillano5248 on Instagram). In addition, she has given it a healthy touch with Sucralín, because it has fewer calories, and everyone can enjoy it, but they are also very good!

Freshly baked, today we invite you to have some delicious and very healthy cupcakes for breakfast. In the fall we find ourselves in, these recipes are more appetizing than ever. Baking at this time becomes more appetizing

Healthy Grandma Cupcakes!!

Ingredients

  • 210 g. whole spelled flour
  • 20g of Sucralin (equivalent to 150g of sugar)
  • 2 eggs
  • 160 ml. mild olive oil
  • 80 ml. milk
  • 2 teaspoons yeast
  • 1 teaspoon ground cinnamon
  • 1 lemon zest
  • s/c Pinch of salt.

Crafting

  • We beat the eggs with the Sucralin, with some electric rods until its volume grows.
  • Add the oil little by little and continue beating. Then add the lemon zest.
    Later, we add the sifted flour with the yeast, the cinnamon and the salt, we will do it in two times alternating it with the milk.
  • We cover the dough and let it rest in the fridge, recommended from one day to the next, this way a more intense and mature flavor is achieved.
  • After the rest time, we preheat the oven to 220 ° with heat up and down.
  • We take the dough out of the fridge, stir it again and distribute it in the molds, (Paqui recommends an ice cream scoop spoon for this). We fill the molds without reaching the top, we will leave a couple of centimeters so that the dough does not overflow when baking.
  • Sprinkle a diced almond on top, but you can sprinkle Sucralin if you prefer, so that you can make that crispy crust.
  • Put the cupcakes in the oven and lower the temperature to 210°, leaving it between 17-18 minutes, or until, when pricked with a toothpick, it comes out clean.

And as you can see, there is nothing better than having some delicious, freshly baked and totally healthy muffins for breakfast. A delicious sweet bite and with 0% sugar!
