CATA's notes: Bright golden yellow color.
On the nose: Great aromatic complexity, powerful honey aroma, toasted notes and raisins typical of the Moscatel variety. Also touches of roses and orange blossom.
In the mouth: It is silky, balanced and sweet. Good balance between sugar and acidity. Overripe grape notes are appreciated that increase the diversity of aromas both on the nose and on the palate. It is a wine with a long finish.
Serving temperature: 7-10ºC
Preparation: the small grain muscat grapes come from the estate: El Bosque. The harvest takes place at night. Ochoa Moscatel is a wine where the winery is always reinvented and each vintage is different. In warmer years, its honeyed, floral aroma and great aromatic potential stand out. However, in the cooler years, the memory of tropical fruits, white flowers and lively acidity stands out. The harvest takes place at dawn; A selection of grapes with slight raisins arrive at the winery where they will be pressed without oxygen contact to preserve the aromatic potential of the variety.
Pairing: suitable for accompanying desserts, cheeses, foie or making cocktails.
The vineyard in Ochoa is worked 365 days a year in ecological. They do short pruning to reduce yields and increase concentration on the future harvest.
In Bodegas Ochoa they do not harvest everything at once or follow an established order. Each grape is picked when it has to be, because nature asks for it.
Most of the time they harvest at night so that the grape does not suffer and with a process that ensures that it passes, in just half an hour, from the vine to the tank, thus avoiding fermentations and ensuring the quality of their wines.
The Bodega team controls the fermentation process, as well as the barrel aging and bottling of the wines.
They represent the fifth and sixth generation of a wine-growing family and, together with the people who work in Ochoa Wineries, and they get up every day with a very clear goal, to work in the fields and always seek quality in the wine, being faithful to their principles, their land and our history.
His wine is born at home, in our lands, is raised in susvides and our vines and ends up being formed in the winery. They respect the natural balance of the earth to the maximum and are one of the most advanced wineries in R&D.
Years of work, research and experimentation have taught them that to make a great wine it is very important to carry out careful viticulture and obtain a low yield in the vineyard.
They have an innovative spirit, but they are faithful to the legacy of their previous generations. Their vineyards come from the old vines of our ancestors, they have selected the best vines and research has helped them multiply their plant material to continue making quality Ochoa wines.
Health and ecology at Bodegas Ochoa are also fundamental: they are carrying out an integral viticulture, treating the land as their grandparents did, but using the most advanced technology. And they are immersed in a process of transition to ecological.
