Description
Made in the traditional way, Ojo Gallo is the most special rosé from Finca Torremilanos that pursues the winery's objective of recovering authentic flavors and practices from the land of Ribera de Duero. Its name alone is a statement of intent, as it is named for its characteristic color, a fine claret, the result of a mixture of different varieties of white and red grapes, which partially ferment with the skins, whose proportion used to respond in times to suit the winegrower.

Tasting note: Frank aromas of red fruits, with hints of scrubland, thyme and lavender.
On the palate it is fruity, silky, persistent and round. Glyceric mid palate presenting a pleasant and well integrated acidity. Very balanced and lively that collects all the nuances of its delicious fruit. It is meaty as well as fine and elegant.

Geology and Soil: Diverse lands in terms of composition due to erosion and sedimentation of the Duero River. Different microclimates marked by the Atlantic-Mediterranean confluence.
Viticulture: Manual harvest. Claret wine from vineyards between 80 and 180 years old in the Ribera del Duero located in the mountains surrounding the winery 600 meters south of the Duero, with 100% autochthonous varieties, white and red, tempranillo, viura, albillo, garnacha, bobal, carignan, monastrel, malvasía ... A wine with great personality, unfinished, unfiltered and without added sulfur, with an alcoholic strength of 13,5%. They make it in a traditional way, and it is also organic and biodynamic, as are all Finca Torremilanos wines.
Crafting: Total destemming, crushing, maceration for 5-8 days in concrete tanks and beginning of alcoholic fermentation with native yeasts, uncovered, end of fermentation in old 225-liter barrels, spontaneous malolactic. Aged for 9 months in old 225 l barrels on its lees.
Pairing: At Made in Spain Gourmet we recommend it for varied salads, vegetables, paellas, rice dishes, pasta from the Dehesa de la Albufera, all kinds of fish and shellfish, white meats. It can be accompanied by all kinds of meals, even enjoyed as an aperitif wine or at the end of any banquet, in the company of a cigar. Ojo Gallo can be drunk young or aged.
Las Majadillas, in the DO Ribera del Duero
Ojo Gallo 2021 comes from vineyards located to the east of Torremilanos, in the sub-zone of Las Majadillas (specifically, from the old vineyard plots of Marciano, Taxista and Titón), within the DO Ribera de Duero. In addition, red grapes from the Monte, located in the center of the main hill of the farm, are incorporated in order to increase the proportions of red grapes (60%) compared to white (40%). These are 100% autochthonous varieties (Tempranillo, Viura, Albillo, Garnacha and Bobal) from which this wine emerges, with great personality, made without clarifying, without filtering and without added sulfur. Like all Finca Torremilanos wines, it is organic and biodynamic.
The harvest takes place first thing in the morning, during the second half of September. After a seven-day maceration with indigenous yeasts, fermentation begins. The tumultuous phase is carried out in 225-liter barrels, where it remains for 10 months, while it undergoes alcoholic and malolactic fermentation, until it is bottled (in July 2022).
Ojo Gallo 2021 is a wine with a bright color, with subtle aromas and flavors from the Ribera del Duero land. A gastronomic wine, rich in sensations that change and evolve as it is aerated.
