INGREDIENTS:
1kg of vegetables
Vegetable broth
½ kg of Chirlas
½ kg of prawns
Extra virgin olive oil Castillo de Canena
Sal Island
PREPARATION:
- The night before we leave the vegetables to soak in plenty of water. They will triple in size.
- A couple of hours we will leave the chirlas in cold water with salt. So that they lose the grit and are ready for cooking.
- We will mark the prawns in the pan and reserve. And later we will peel them
- Cook moderately with the heads of the prawns and with the vegetable broth, to give it all the flavor of the prawns (20 minutes).
- Later we recover the broth with a strainer and a saucepan.
- We put the broth with the taste of prawns in the pan with the beans. We take advantage of the water in them to give it more flavor. Later we add the chirlas to the satin so that they open up. And later, the prawns are added so that they are impregnated with the beans with a brief cooking, so that it is honeyed (1-2 min)
PLATE PREPARATION:
Once the beans are cooked, they are plated with the chirlas and the prawns. And the final touch will be given by the emulsion of extra virgin olive oil mixed with the essence of the prawn heads, which we have reserved to give it that flavor of the sea. And ready to eat.
