Data sheet:
Winery: Can Bas (Pere Ventura)
DO Penedés
Vintage: 2019
Variety: 55% Chardonnay 45% Xarel.lo.
Grade: 14,5% vol.
Tasting note:
In view, it is pale yellow and clean.
On the nose, it shows a fair combination of citrus and vanilla notes from the oak.
On the palate, the entry is light, the texture pleasant and the aromas are intense, and a long aftertaste.
Operating temperature: between 10 and 12 ºC
Geology and Soil:
The Chardonnay sits on a calcareous-clayey soil, and with a slightly alkaline pH. The vigor of the vineyard is controlled with the use of plant covers. The small proportion of Xarel·lo comes from the sandiest part of the farm, with low water retention, which naturally brings high water stress to the plant in summer.
Pairing
At Made in Spain we recommend combining it with oysters, shellfish, and white fish. It also goes well with our tasty foie gras from El Greco or with Oncala cheese creams and crackers from Paul & Pippa. Another suggestion is with our Dehesa de la Albufera rice dishes, a paella or a good soupy rice with lobster,
Preparation:
Manual harvest and selection in the vineyard and later at the selection table. The grapes are loaded into boxes and refrigerated for 24 hours at about 10ºC. Skidding to avoid herbaceous and bitter notes. Gentle pressing with low yields. Fermentation of the different varieties separately at 15ºC. A part of the must resulting from the coupage of the two varieties is fermented in 500-liter French oak barrels for six months to increase the complexity of the wine. Clay jugs are also used during the aging and fermentation process.

Can Bas it is a place and it is an idea; maybe also a passion. It is a way of making wine, a landscape and a people.
All this constitutes the wine domain Can Bas.
The Brand
Name Can Bas that today designates the brand of its wines and the wine domain dates back to the year 1668. In Catalonia, it is a tradition to name country houses -whether large or small- with the name of the owner preceded by the word Can, which means house . Thus, the name Can Bas means house of Mr. Bas. Despite the fact that the farm and the farm already existed in the Middle Ages, the name that has survived to this day originated at the end of the XNUMXth century. In memory of that moment, the CAN BAS logo adopts a Roman family typeface in a tall box; classic, slender and inscribed in a rectangular frame topped with baroque-inspired scrolls.
In honor of antiquity and the medieval origins of the wine domain, the CAN BAS brand is also distinguished by its logotype. It is a Greek cross framed within a rhomboid figure of centrifugal composition, unusual in our lands. This cross crowns the belfry bell tower of Sant Joan Salerm, the Romanesque church owned by the Can Bas domain that saw the birth of a house, vineyards and crops. The cross is the symbol of this house, witness of its history and its evolution. The cross represents the crossroads where land, time, men, vineyards and wines come together.
Finally, in homage to the Mediterranean roots of the Can Bas wine domain and as an expression of its ideology, the CAN BAS brand establishes blue as its corporate color. A deep, warm, placid, luminous, reverberant blue; symbol of trust and sincerity. A blue that is a metaphor for time and a sign of a spirit. Blue honors all of us who have made it possible for Can Bas sea Can Bas.

The responsibility, also, to preserve the environment and to act following a code of good practices and environmental sustainability criteria. In Can Bas They have set themselves the goal of making honest wines, imbued with an enormous natural and human quality so that you can enjoy them to the full.
The Vines
En Can Bas, the vineyard has been cultivated without interruption for more than a thousand years. A document from the end of the XNUMXth century proves that very close to Sant Joan Salerm -church owned by Can Bas- There were vineyards that were bought and sold among the Catalan medieval nobility. However, the indications of Roman times, and even Iberian, show that in his house, the cultivation of the vine goes back many more centuries.
Today, the wine domain Can Bas It concentrates 60,5 ha of vineyards spread out between the plain near the farm, the Font de Can Bas, the slopes of Les Tarumbes, the hollow of the Els Bribons stream and the sunny part of the Els Basets hill, in addition to the vineyard from the Serral coast within the municipality of Sant Sadurní d'Anoia.
En Can Bas they understand that each plot is unique and that each vineyard has its own personality. Consequently, the work and the treatment they give you are exclusively. They have hundred-year-old vineyards that produce very few grapes but of a marvelous quality; young vines that bring lightness and freshness to some of the wines they make; Mature vines that are around thirty years old, which confer a serene and mature character to the crianza wines.
Due to the diversity of location and orientation of the plots, the different soils, altitudes, orthographies and the range of microclimates, in Can Bas They can grow autochthonous and foreign white and red grape varieties, as well as adapt each variety to the most favorable conditions of the terroir.
