Once again we have to be grateful to the benign weather of our beloved Penedés, for giving us the possibility of having an excellent 2019 harvest.

This week we begin the 2019 cava tirage, which consists of bottling the base wine by adding the tirage liqueur. This tirage liqueur is nothing more than wine and sugar in order to carry out the second fermentation. Tiraje liquor is added to the base wine together with the yeast to cause the second fermentation.

We are very happy with the quality of the wines that we have obtained. We believe that they will be remembered as unbeatable wines and cavas. Due to the good weather conditions this year, it was possible to reach the harvest with a grape with very good health. The spring rains and the temperatures a little lower than the average of previous years, allowed a calmer ripening, placing the grapes at a maximum quality. Therefore, a grape with an ideal graduation and acidity was obtained to make base wines for cava.

Humidity and temperature conditions have been ideal to have a grape with an ideal graduation and acidity to make base wines for cava. And therefore we can say that this 2019 vintage will be one of the excellent harvests, and after bottling and aging, which we will do in our barrels, and that it will be between 24 and 60 months, it will result in cavas of the highest quality. .
