Ham is the noble piece par excellence. It comes from animals that are more than 22 months old and weigh 160 kilos. They simply add sea salt to the hams and, after a brief salting period, they are first sent to the drying room and then to the cellar. In total, more than 36 months of curing and maturation, during which, in addition to the chemical changes and formation of aromatic compounds, a loss of around 35% of its fresh weight occurs.
Characteristics of 100% Iberian acorn-fed hams are the black pata, synonymous with the authenticity of its genetics, and the fine cane. Among its attributes, the “flavor” (smell, taste and texture combined), the shiny leanness and the fluidity of the fat, which are unmistakable and mean that, when tasted, it gives rise to a series of sensory perceptions that awaken the senses. , enhancing its unsurpassed “bouquet”.
They are 100% Iberian Acorn-fed Hams fully certified by certifying entities accredited according to the Iberian Standard included in Royal Decree 4/2014.

Date of Expiry: It has no expiration date, but it is recommended to consume not exceeding 6 months from the moment of sale.
Conditions of conservation: Dry and cool place (between 10º and 20º) and preferably hanging. Once cut, it must be consumed immediately or wrapped in wax paper or transparent film to avoid contact with air. In any case, it is advisable to cut only what is going to be consumed. It has an approximate consumption period of 3 months once the cut occurs, but it is advisable to consume it within 30 days.
