Tasting note:
In view: of an intense golden color, it gives off a fine and persistent bubble, integrated. Clean and bright.
On the nose: aromatically intense, surprising in olfactory complexity with a set of aromas of unusual freshness, and tertiary aromas typical of aging: citrus and herbaceous notes are integrated with those of pastry, spices, dried fruit, cereals, toasts and chocolate.
On the palate it is an organoleptic extension of its aromatic richness: with a range of flavors ranging from acacia flower to notes of dried fruit, toffee and pastries, it is sumptuous, fresh, broad and rich in nuances. Velvety, it has an intense and persistent finish on the palate, slightly fresh and with a touch of bitterness.
Operating temperature: between 9 and 10 ºC
Geology and Soil:
The freshness, body and complexity of TRESOR ANNIVERSARY are the result of a successful blend of grapes from different vineyards and located at different altitudes. The Macabeo is originally from the best plots, located a short distance and altitude from the Mediterranean Sea, in coastal and coastal areas of Garraf. Xarel·lo, the queen variety of cavas, is obtained from a selection of grapes from different plots located on the Pere Ventura estate, Can Bas Domini Vinícola.
In the Central Penedés, Can Bas comprises an area of 80 hectares of vineyards, in an unbeatable Mediterranean environment due to the growth and maturation of this native and traditional variety of the Penedés. La Parellada is born in the upper Penedés, where the soil and the weather facilitate the ripening of the grapes, slow and late harvest. The Pere Ventura technical team supervises and subjects the locking processes of these vineyards to criteria of sustainability and maximum respect for the environment.

Preparation:
TRESOR ANNIVERSARY is made from the traditional blend of the three autochthonous varieties of Penedés: Xarel·lo, which provides body, structure and aging capacity; the Macabeo, finesse and freshness; and the Parellada, which gives kindness, perfume and elegance. Each variety is vinified separately from the flower must obtained from soft pressing and static racking.
Fermentation takes place in stainless steel tanks at a controlled temperature of 16 to 18 ° C. Once the coupage has been made, we proceed to clarification, not very aggressive, and to tartaric stabilization.
The second fermentation is carried out in the bottle following the Traditional Method, and aging in rhyme in the underground galleries of our winery. The optimal state of aging marks the moment of uncorking. One by one, each bottle is clarified and finally capped with a top quality cork.

Cava is synonymous with excellence, and achieving it requires genuineness. This is guaranteed by the entire production process which, at the same time, offers different types of product -according to the aging and its sugar content-, which make Cava one of the most versatile drinks in the world.
To the already guaranteed quality that the traditional method implies, a more demanding classification is added with the introduction of the categories of Cava de Guarda and Guarda Superior. All this to better identify the origin and traceability of each of our little jewels and to more clearly identify the Cava segments according to their aging. A unique classification that places DO Cava at the forefront of quality sparkling wines that follow the traditional method.
Knowing its categories is entering a world of flavors and history... The one that gives each bottle the aging in the cellar. The months of storage are the ones that will decide these categories, from the Cava de Guarda (minimum 9 months) to those of Guarda Superior, with a rest period of more than 18 months (RESERVE), 30 months (GREAT RESERVE) or those valued Cavas from Paraje Calificado, aged for more than 36 months.
In short, a multitude of options to enjoy, and a lot, not only of the quality of the Cava but of its infinite pairing options.
Types of Cava
Versatility multiplies when we talk about the different types of Cava allowed based on added sugar. Thus, in each category we can also choose based on the type. From Brut Nature (without added sugar) to Sweet Cava -ideal for a pleasant after-dinner meal- we have endless options that include Brut, Extra Brut, Semi Dry and Dry. The Gran Reserva and Cava de Paraje categories are only allowed to offer the Brut types (Brut Nature, Extra Brut and Brut).
