On a few very specific days, at the beginning of the harvest season, during the month of October, it is made from green fruits to achieve its unique attributes. At least 20 kg of olives are necessary to obtain 1 liter of product, since the green olives have not yet formed their oil. So you can already imagine how exclusive this oil is.

AROMA
On the nose, intense fruitiness of green olives.
Flavour
On the palate, incredibly sweet, which contrasts with the green of its colour, slightly bitter, almond-like and somewhat more spicy.
Pairing: It is the ideal companion to highlight raw salads, vegetables, sauces and vinaigrettes. (perfect for emulsified sauces) And completely amazing for making desserts and sweets like brownies.
