Description

On a few very specific days, at the beginning of the harvest season, during the month of October, it is made from green fruits to achieve its unique attributes. At least 20 kg of olives are necessary to obtain 1 liter of product, since the green olives have not yet formed their oil. So you can already imagine how exclusive this oil is.

Monovarietal Extra Virgin Olive Oil of a superior category made from the absolutely green Manzanilla Cacereña variety. From olive groves grown in “Red Natura 2000” spaces with special environmental protection. Traditional, ecological, traditional and dry farming.

Extraction system:| Cold-processed from the first extraction and immediately after the fruit is harvested. Controlled speed grinding

Storage: Stainless steel tanks inerted with gaseous nitrogen. Decanted prior to resting in the cellar.

Conditions of conservation: It is recommended to always have it protected from light, to slow down its oxidation. The glass of the bottle is protected against UV rays.

Preferred consumption: 18 months from its packaging.

AROMA

On the nose, intense fruitiness of green olives.

Flavour

On the palate, incredibly sweet, which contrasts with the green of its colour, slightly bitter, almond-like and somewhat more spicy.

Pairing: It is the ideal companion to highlight raw salads, vegetables, sauces and vinaigrettes. (perfect for emulsified sauces) And completely amazing for making desserts and sweets like brownies.

Thanks to this new purification system, the water used in the olive oil production process can be returned to the public channel or used for irrigation.
