Once the curing and maturation process is completed, the unit weight ranges between 350 and 400 grams.
It has a high iron content that is manifested in its strong purple color and its energy value is such that, when consumed, with just a few slices you can notice the sensation of energy recovery.
Its organoleptic characteristics are unique, and for tasting, we recommend removing the vacuum bag, leaving the piece in a cool, dry place for 24 hours and slicing it with a thickness of around 1,7 mm. When cutting the pig, the Presa is located between the upper part of the shoulder and the loin.

This is how an exclusive and homogeneous quality is achieved in all the products that share the same Designation of Origin. When it comes to Iberian shoulders and hams, which come from animals that comply with the regulations regarding Iberian pigs, there are only 4 in all the world.
