Northern Albacore (Thunnus Alalunga)

The Northern Albacore (Thunnus Alalunga), also known as albacore tuna, belongs to the tuna family and is part of the culinary excellence of the northern part of Spain, especially the Cantabrian coast, thanks to its exquisite flavor and mildness. texture, thus being the favorite preserve of the most exquisite palates.

At the end of spring, the Northern Bonito moves towards the waters of the Bay of Biscay and that is when the Costera or Bonito campaign begins, which usually ends in October. It is caught with selective fishing gear, one at a time, with a hook, so that the fish does not suffer and to be able to offer higher quality meat. This species is characterized by the large size of the pectoral fins.

Its consumption is recommended by doctors and nutritionists due to its high Omega-3 content, which helps reduce cholesterol and triglyceride levels in the blood, helping to reduce the risk of cardiovascular diseases.

The owners of MA Revilla, began in January 2013, and in order to recover the family and artisan tradition, to make the salted Cantabrian Anchovies MA REVILLA®. Its Cantabrian anchovies belong to the Engraulis Encrasicolus species, caught in the fishing grounds of the Cantabrian Sea during the spring coastal season.

They are the tastiest and most sought after on the market. After being caught, cleaned and matured in salting (between 10 and 15 months), they are handcrafted with the highest quality raw materials in our factory in Santoña (Cantabria).
