Tasting note:
Given: a golden yellow color, with enough intensity, very bright and clean, a movement in the glass with glyceric touches that show us a good and beautiful tear.
Nose: offers intense aromas of ripe stone fruits (peach, apricot) and tropical notes.
Boca: Costenc is dry and fresh with a balanced acidity on the palate.
Serving temperature: 10-12º C
Preparation: It is a really different and perhaps unique wine, since we are talking about a wine made as a single variety with a recovered white grape such as Malvasía de Sitges. A grape recovered by this project, Set & Ros, made outside the DO, and aged in barrels for 6 months that gives it great complexity. A limited production of 3.400 bottles of this estate wine.
Pairing: en Made in Spain Gourmet We recommend it with fish, shellfish, white meat, poultry, soups, creams, and vegetables. And of course with vegan semi-cured cheeses from Veggie Karma and sheep semi-cured cheeses from Calaveruela.
Costenc, a wine for design-loving winelovers
As if it came out of the sea, its 'coastal' wine Costenc conquers inside and out... It is made with grapes 'punished by the sea' of the forgotten Malvasia variety from Sitges, whose essence is reflected in the bottle itself, which seems to have medium body damaged by saltpeter as if it were a buoy. It is a wine of character, fresh, with aromatic complexity in ripe fruit and floral notes of which only 3.400 numbered bottles are made. The marine erosion of the vineyards marks its flavor and is reflected in a container that speaks for itself.

Main characteristics of the Malvasia grape
Before starting to describe this type of grape, you should be aware that we are talking about one of the oldest grapes in the country. There are not many regions with this grape since its production is low due to its sensitivity, it tends to be very susceptible to various diseases, so little by little they are replaced by other stronger varieties.
Its cluster is medium and not very compact, it is extremely sensitive to rot, a fatal characteristic in winemaking. The sensitivity of this grape means that not many bet on it, therefore the wines made with Malvasia are unique and very special.
It is an international variety as we can find it in Portugal as a protagonist in the elaboration of the madeira wine, in France, Croatia, Slovenia and even in Brazil, but Italy is the main producer of this variety. In Spain there is also a wide extension. The autonomous communities of Castilla y León and the Valencian Community are the clear representatives, although Aragón, the Balearic Islands, Castilla-La Mancha, Cantabria, Rioja and Murcia also support it.
Origins of the Malvasia grape
Depending on the expert you talk to, they will tell you that this variety comes from Asia or Greece. The exact place of origin is not clear, nor are the grape varieties that precede it, but its Greek origin is important. It is said that those responsible for introducing it in Spain, in the fourteenth century, were the Almogavars. These organized in guerrilla troops were dominated by the kings of the Crown of Aragon and settled on the coast of Valencia after the expeditions from Byzantium returned.
Several sub-varieties have emerged from this variety, due to its great internationalization: Alarije, Chasselas, Malvasía aromatica, Malvasía castellana, Malvasia rosa, Malvasia volcanica or Malvasia black. Depending on the production area in which it is made, you will be able to find one or another variety.
Characteristics of wines made with Malvasia grapes
Within this group we can find from the youngest wines made 100% with Malvasia grapes to Crianza or Reserva, where in most cases we find wines made with more than one variety. The young wines made with these grapes have greenish-yellow tones, while the Crianza wines are closer to golden tones. It has a high sugar content, which makes it perfect for making sweet wines. In this way, Malvasia wines withstand aging well.
