Information about Setacor

María Rosas is a mycologist from Córdoba, and is the owner of Setacor, which is a small company located in the heart of the Guadalquivir valley, Andalusia, surrounded by olive groves, wheat fields and a few meters from the leafy banks of the river that gives its name to the valley. .

They have been dedicated to the cultivation of mushrooms for two decades.

His way of producing is unique in the world. Fungi are decomposers of organic matter and their cultivation was born to take advantage of by-products of agriculture such as cereal straw, corn pits, vine shoots, etc. Setacor uses our own leaves from their own olive trees that they collect when they take the olives to the mill and clean them of leaves, broken branches, etc. They also use the sawdust that remains after the pruning they do during the cold months of the year.

They barely cultivate the common mushroom anymore, but instead preferred to start cultivating pink, yellow, poplar, thistle, enoki, shiitake and lion's mane mushrooms. Sustainably, each species is produced during its fruiting season.

That way, instead of artificially air-conditioning the rooms to produce just one mushroom a year, they grow each mushroom in its season, with the windows open.

Thanks to this management, we have received regional awards and awards from the Ministry of Agriculture for the sustainability of their crops.
