Variety: 60% White from the country, 15% Sauvignon Blanc, 15% Chardonnay, 10% Viura.
Tasting note: It came with light golden notes that denote its barrel aging. Clean, bright and crystalline. Intense and complex nose with aromas of anise, honey, almond and lilac flowers, quince, dried fruits and chamomile and with an elegant mineral background. Wide and voluminous, fresh, it is a wine of length, with a journey and storage capacity.
Serving temperature: 6-8º C
Geology and Soil: Diverse lands in terms of composition due to erosion and sedimentation of the Duero River. Different microclimates marked by the Atlantic-Mediterranean confluence.
Viticulture: Manual harvest. Average age of the vineyard: 80 years. Altitude: 830 m. Sauvignon Blanc, from vineyards at Finca Torremilanos in the municipality of Aranda de Duero. Average age of the vineyard: 25 years. Altitude: 830-850. Viura, from the Rubial vineyard in Fuentenebro. 180-year-old vineyard at 1000 meters of altitude. Chardonnay, from vineyards located in Finca Torremilanos.
Crafting: This wine belongs to 2 different harvest moments. The Sauvignon Blanc grape ferments together with the Chardonnay. The White grape of the country ferments together with the Viura. Fermentation in 225-litre oak barrels for several months. Aged for 24 months with lees in the same barrels in which it was fermented. Malolactic fermentation, unclarified and unfiltered wine. No SO2 added.
Pairing: It is a surprising wine so look for a surprising pairing. In Made in Spain Gourmet We can think of strong cheeses, such as aged sheep and goat cheeses, from Quesería 1605 and Quesos Vazquez respectively. Also something spicy or very spicy food.
