Tasting Notes:

Sierra La Solana truffled is a Manchego sheep cheese that, throughout its 3 months of maturation, is capable of developing pronounced aromatic nuances. Smooth, buttery, it glides across the palate showing subtlety and broad expression. One of the best truffled cheeses in Spain.

Pairing:

We would pair it with Crianza red wines, dry white wines and sweet wines, and also on the other hand, it can be paired with extra virgin olive oils, honeys o jams.

Conservation:

The ideal temperature for cheese conservation would be 8 – 10 ºC. If we want to stop the evolution of the cheese and the molds in the natural rind, the temperature should be 4ºC. The preferred consumption will be for a minimum of 8 months, although it must be taken into account that, from the 4th month, if the cheese is wrapped in paper, it will begin to stain due to the activity of the molds in the natural rind.

With a Protected Designation of Origin (PDO), it is located on the Finca Sierra La Solana, -Ciudad Real, a natural setting, surrounded by vineyards, almond trees and scrub, a typical La Mancha vegetation, which gives great flavor to the milk.

It constitutes the wager the brand for promoting and proudly maintaining the tradition of Manchego cheese, considered one of the best in the world for its very special qualities and its completely handmade production process. The entire process of making 1605 cheese is carried out completely handmade by its expert cheese masters. The filling of the curd in the molds is done manually, one by one!, with a gentle pressing at first and then more and more intense. The result? A select cheese that stands out for its elegance on the palate, its fruity character and its intense and persistent flavor. Quesería 1605 has the appropriate equipment to manufacture a cheese with the proper health guarantees, meeting the approval criteria set by the European Union.

An example: To make 1 kg of cured cheese requires between 5,5 and 6 liters of the best milk.
