In its amanuense elaboration, the milk is pasteurized and the rennet is cut to a fine grain (size of small rice). A minced mixture of 7% truffle 50% mushrooms with salt and pepper is added to the molds and it is refrigerated to mature. During its maturation, every 10 days the exterior is reviewed with a sponge impregnated with extra virgin olive oil, in order to keep only the desirable fungi.
The result is a unique cheese with a suggestive color, that tastes like good cheese, with an elegant silky texture on the palate, and tastes and smells like truffles.
Pairing:
These cured cheeses are fantastic with white and young red wines, but we never say no to a premium cava. Another ideal pairing is with fig, pear or peach jams, and with extra virgin olive oil.
