Ochoa Reserva is a red wine made with a selection of grapes in its vineyard, which will then age in oak barrels for a long year and then in the bottle for a minimum of 3 years to become Ochoa Reserva. Made with Tempranillo, Cabernet Sauvignon and Merlot grapes from the El Secadero, La Milla and Montijo estates. It ages for 7 years in the cellar, the first 15-18 months being in new American and French oak barrels of 225 l.

Description

Information about Ochoa

The vineyard in Ochoa is worked 365 days a year in ecological. They do short pruning to reduce yields and increase concentration on the future harvest.

In Bodegas Ochoa they do not harvest everything at once or follow an established order. Each grape is picked when it has to be, because nature asks for it.

Most of the time they harvest at night so that the grape does not suffer and with a process that ensures that it passes, in just half an hour, from the vine to the tank, thus avoiding fermentations and ensuring the quality of their wines.

The Bodega team controls the fermentation process, as well as the barrel aging and bottling of the wines.
