In them they enjoy an exquisite diet composed of this selection of cereals as well as grasses, tubers, roots and acorns, reaching 90/100kg at the beginning of October (when the montanera begins), at which time the acorns and They feed exclusively until they reach an approximate weight of 180kg in their adult stage. This is essential to maintain the Iberian breed and be able to call it acorn-fed Iberian.
These Iberian hams, due to the breed that characterizes them and their exquisite diet, have an elongated and stylized shank with a golden, fluid fat on the outside, while on the inside it shows a pink and melting appearance that floods the mouth with intense and prolonged nuances.
Tasting Notes
In the 100% Iberico Bellota Ham “Pata Negra” we discover a ruby red hue, a delicate grain and a high percentage of oleic acid that helps maintain an adequate level of cholesterol in the blood, in addition to being rich in proteins, vitamin B1 , iron, zinc, magnesium, folic acid and vitamin E (excellent antioxidant). On the nose we recognize intense and pleasant aromas exclusive to 100% acorn-fed Iberian ham, typical of its character and personality. In the mouth we appreciate an intense and persistent flavor with a characteristic sweetness of the BEHER Oro 100% Iberian acorn-fed ham due to a reduction in salting time and long maturation, achieving a healthier and tastier product, pleasant for all palates.
