Information about Conservas Chanquete

Manuel Fernández, J.Miguel Giráldez and Alejandro Iglesias are the creators of Conservas Chanquete. The idea arises from Fernández who, as a result of his managerial experience in the fishing sector, detected the market niche of the wild chanquete (Aphia minuta), a species that trades at the price of gold in the fishmongers (€ 40 / kg).

His idea convinced the other two entrepreneurs, specialized in the world of communication and financial services, in December 2012 they created the company and in March 2013 they launched the canned chanquete and piquillos, a Galician interpretation of a traditional recipe. of Andalusia.

Chanquete also names his company Conservas Chanquete.

Since its first, it preserves the Piquillo Peppers stuffed with wild Chanquete until today, they have been bringing to the market “different” gourmet preserves such as Cocochas with eels from the Miño River, white and green Pochas with Mussels and Wakame from the Galician estuaries seafood broth, Piquillo Peppers stuffed with mussels in seafood sauce, the line of fish and shellfish patés or the last one, pickled mussels with Picual extra virgin olive oil and albariño vinegar.

The entire process of making their preserves is done in a completely artisanal way, from blanching and peeling the piquillo peppers, through the filling, the sauces and the closing of the preserves.

For the preparation of their sauces we use fresh products from the garden of Navarra and Galicia of the highest quality such as tomato, onion, garlic, leek, carrot, etc.

The artisanal elaboration of its gourmet preserves guarantees an exclusive gastronomic experience without preservatives or dyes.
