La Despensa D´Lujo is a Rural Galician company dedicated to traditional agriculture in the Bergatiños region, Coruña province, inherited from the hands of past generations. From their grandparents they received not only the land, but the care and dedication it needs. Today, the young farmers of Coristanco made the leap from the potatoes or broad beans they grew -first their grandparents and then their parents-, to the introduction of crops such as green beans, pink fabon, tear peas, chickpeas tear, chervil root ... even beans for the Galician soup, which was in danger of extinction. Her secret, being sustainable, pampering the land where her vegetables grow, connecting with the land to give her the best and that she also responds. Like their grandparents did.
They cultivate in a traditional way, taking advantage of the resources so that the productions are sustainable, but at the same time they are in a constant process of innovation. They collaborate with the Biological Mission of Galicia, dependent on the Higher Center for Scientific Research (CSIC), but they also carry out their own tests on the field. All these crops are grown on farms they own in Coristanco, but there is also a neighbor who leaves them for free just to avoid seeing them abandoned. It is a way of recovering the land, giving it value while curbing abandonment.
The legumes of La Despensa D´Lujo use for their haute cuisine dishes the great chefs such as: Ricard Camarena, Iván Domínguez, Paco Morales, Rubén Trincado, Adrián Felipez, José Manuel de Dios, Carlos del Portillo, Juanjo López Bezmar, Manuel Costiña , Alberto Laredo or David de Jorge, the right hand of Martín Berasategui.
