The secret of good pasta

Sanmartí pasta since 1700, from generation to generation, has always been made in an artisan way.

Elaboration with the best raw materials, the thermal waters of Caldes de Montbuí and the treatment that three centuries ago have given to their product, makes them obtain a high level of quality in their pasta.

Caldes de Montbuí, in the Vallès Oriental, 20 km from Barcelona, ​​is a beautiful Roman villa where spas and Catalan gastronomy are practiced and which preserves a centuries-old tradition.

Production process

It is like going back to the past in a time machine, manual processes, wood, old facilities... and people, no robotization of the process.

Production begins with a grazer (which is over 100 years old), which mixes the wheat semolina with the thermal water from Caldes de Montbuí, which are the only raw materials used. This type of production is what guarantees the success of their pastas.

After drying on wooden furniture for 48 hours, they are finally packaged. The noodles and spaghetti are still done manually.

Limited production is what guarantees its highest quality, something that industrial production cannot do.

Noodles since 1700 

The Sanmartí family has a storied past that dates back to the XNUMXth century.

In 1700 Isidre Sanmartí was the first to experience the properties of transforming wheat into flour and mixing it with hot water. A dough was obtained that, when properly prepared, was suitable for immediate consumption. The problem was that it didn't keep for long as it became rigid over the hours.

Thus, the Sanmartí family began to treat the dough with shape and texture, inventing a wooden device with exit holes through which, by pressing very hard, the dough came out in the form of fillets, currently noodles or spaghetti.

These threads, leaving them to dry properly, had a very long duration since once the paste was dry it could be stored and then by putting it in hot water and boiling it, it softened and was suitable for consumption. This is where the SANMARTÍ fideueros from Caldes de Montbui were born.

The following generations were Carles Sanmartí i Caselles (the second) and Josep Sanmartí i Castellà, (the third). The fourth generation of the Sanmartí family was in the year 1855, when Jaume Sanmartí i Farreras officially appears in the records of the City Council of this town as a manufacturer of pasta for soup.

Josep Sanmartí i Cladelles, outside the fifth generation. But already the sixth generation realized that pasta had a very good commercial future. Jaume Sanmartí y Samsó "l'Avi" began a new projection, which his son Josep Sanmartí y Casabayó together with his wife, who by reason of widowhood took over the business, gave the necessary impetus, incorporating the latest technology of the moment, as well as the necessary facilities to make the company between 1940 and 1975 a competitive line at that time.

As of August 1998, Eulàlia Rifé i Catafau, widow of Josep Sanmartí i Casabayó, leaves her son Carles Sanmartí i Rifé in charge of the business, who will continue with the family's conservative line, incorporating new machinery and technology in order to make the business profitable. business, without forgetting the traditional and very expensive process of elaboration and drying.

A whole history that already adds nine generations, and that fills us with pride to share with them our environment of Made in Spain Gourmet. Their pastas are excellent and with them we will conquer the international market.
